Simple Banana & Coconut (Cream) Dream Pie!!


Summer is here and it is time for those yummy refrigerator pies to make an entrance! This recipe takes the classic cream pie to a tropical level with both banana and toasted coconut as part of the filling. Then it's topped with some whipped cream and more toasted coconut all sitting in a crumbled vanilla wafer crust!
And the best part is that it is easy peasy to make!!


The basic recipe I used is from Eagle Brand only I made a couple changes. First, instead of using a graham cracker crust, I  decided on a vanilla wafer crust. For some reason I just thought vanilla wafers would go better with the whole banana flavor thing. This was easy enough to make, although I should have opted to use my food processor to crumble up the cookies instead of pounding them down manually using my trusty rolling pin. Just mix the cookie crumbs with butter, about 1/3 cup butter to 1 1/2 cups cookie crumbs, and press into a 9 inch pie plate. Then for the whipped cream topping I just used good old Cool Whip instead of whipping up my own from heavy cream. This what helped to make the recipe so simple.

For the filling all I used was...

3 T corn starch
1 1/3 cups water
one 14 oz can of Sweetened Condensed milk
3 large egg yokes, beaten
2 T of butter cut up in small pieces
1 tsp. of vanilla extract
1/2 cup plus 2-3 T of flaked coconut, toasted
and 2 ripe bananas dipped in some lemon juice

Start by dissolving the 3 T of corn starch in the water in a medium size pot. Then add the sweetened condensed milk and then slowly add the egg yolks all the while stirring consistently with wire whisk over medium heat until the mixture becomes thick and bubbly. Remove from the heat and add the butter and vanilla extract. Then let it cool slightly before adding the 1/2 cup of toasted coconut.

Slice your bananas and dip into the lemon juice, this will prevent them from turning brown. Arrange slices in the bottom of the pie crust and then add your coconut cream filling. Cover with plastic wrap and refrigerate for at least 4 hours or until set. 

Before serving, remove plastic wrap and top with the whipped cream then garnish with the remaining toasted coconut.


See wasn't that easy???
Mr. Rosemary Lane and the kiddos LOVED it! Mr. RL said it was super creamy and even my son Michael, who is not the biggest fan of coconut, gave it a hearty thumbs up!

Giving a New Fun Look to a Couple of Old Chaises ~ Painted Outdoor Cushion Project



Ahhh it's SUMMERTIME and the living is EASY!!! Well maybe it is if you are a couple of kids enjoying the fun of splashing around all day in the swimming pool. That's pretty much what Michael and Grace have been up to since school has let out. And when they are done with the pool they have always taken their respective towels to our front driveway and spread them out there to sun themselves.


I've always found that to be a rather uncomfortable way to sunbathe, so recently I did a little internet searching to see if there was a way of sprucing up a couple of old wrought iron chaises and their cushions we happen to have in the garage. I wanted to do something practical but fun...you know with bright summertime colors.



I found a spray paint specifically made for painting fabric, but I felt that the price was way too costly for the old beat up and faded cushions we already had. So I stuck with a common tutorial which seemed to work for the people who tried it.


The one I decided to go with involved just a few products. First I purchased a quart of exterior paint in a flat finish. The color I chose was Rainwater by Behr paint. Next I purchased a fabric medium by Martha Stewart over at Michael's craft and supply store. The last few items I needed were a paint brush, which I already had, along with some good old tap water and a clean sponge.


The technique is pretty easy with no exact science to it. 
Just mix roughly two parts paint to one part fabric medium along with an equal amount of water. I made sure my cushions were clean by running them through the washer and dryer before starting. Next use your clean sponge (I stress clean because you don't want any little pieces of "ick" stuck to a dirty sponge falling off onto your cushions) to dampen the cushion before you begin to paint. It took about three good coats for complete coverage. I brushed the paint on thinly and then let it dry thoroughly before adding the next coat. (Hint: make sure to do this on a dry sunny day, this will help to reduce drying the time between coats and move the entire project along much faster.)
The below pic is my cushion after 2 coats.


Once the cushions are painted they do have a bit of a "plasticy" feel to them. A few tutorials suggested sanding them down between coats, but for me that "plastic" feel was just fine. I liked that they will now repel water, can be rinsed off to clean, and hopefully not fade out as easily in the intense summer sun. (I'll have to post an update at the end of August)

I also went ahead and spray painted both chaises white. I thought this would be a much prettier contrast to the new bright blue color of the cushions.


The little brown table between the two chaises also received a fresh coat of ivy green paint.


I picked up a couple of cute outdoor pillows from Walmart for five bucks each.


This project's total breakdown...


Plus $10 for the new pillows for a complete cost of $55 before tax.
Not bad since it would have cost at least $70 just to replace the cushions!

Are they using the chaises now??? 
YES!!!



And it is two thumbs up from the peanut gallery!!!

Using Clay Pots in Wire Planters as an Inexpensive Alternative to Coco Fiber Liners


I love window boxes...who doesn't? And as far as I am concerned geraniums are the classic flower to find in any kitchen window box. Earlier this year I had pretty pansies in a rather drab box...but I wasn't to worried about the way the box looked...I just wanted to see my flowers while standing at my kitchen sink. But as the season went on the pansies became rather leggy and just were not holding up to the strong afternoon sun of these early summer days...so they had to go!


Enter some pretty pink geraniums.
(This particular variety is called Pink Sizzle)



I decided to replace the weathered and faded plastic boxes (yes plastic boxes, hanging my head in complete shame) with a couple of wire planters which required the coco fiber liner. While I do love the look I did have a pretty unfortunate experience a couple years ago with the coco fiber becoming old and dried out. I had the planters in the front of our home and one night I decided to water my planter's flowers when all of a sudden I found myself running from a nest of bees. Got stung...yep it hurt too. So from that point on I didn't touch those planters, my plants died and I was done with the coco fiber. Apparently bees nest in dead things and since the fiber I had used was a few years old, and fairly dried out, well the bees found it to be perfect place to call home.

 So instead of using the coco fiber and replacing it in whatever number of years, I decided to buy inexpensive clay pots and plant each of my geraniums in their own pot.



And I am really digging the look!
