Mint Chocolate Brownies made with Oreos and Andes Candies



These tasty brownies are so easy to whip up! All you need are 12 mint Oreo cookies, about 24 Andes candies, a box of dark fudge brownie mix plus the ingredients needed according to the package...and GO!

First  spray the bottom of a muffin pan with cooking spray. I happen to have a pan with squares for making individual brownies or cake squares. 

Crush the cookies on a cutting board with a rolling pin. You may want to place a piece of wax paper between the pin and the cookies because the cookies will begin to stick to both surfaces. This way if it sticks to the wax paper it is much easier to pull off. Divide the cookie crumbs and place in the bottom of each cup in the pan. Then prepare the brownie mix according to the package instructions. Divide the batter among the 12 cups and bake in an oven set at 350 degrees F for 24 minutes. 




In the meantime chop up the Andees candies and set aside. When the brownies are all done baking, sprinkle the chopped up mint candies on top of the brownies and let melt. If you need to you can pop the brownies back into the oven for a minute or two until the candies are all melted.




I just whipped these up this afternoon for my religious education class to help celebrate St. Patrick's Day...I sure hope they like 'em!

Top o' the Mornin' to Ya ~ Happy St. Patrick's Day!!!



Yesterday the 300 year old town of Clinton New Jersey celebrated March 17th with their very first St. Patrick's Day parade, and we were there to witness the big event!

Irish Inspired Mantel Display

After changing the lettering on my St. Patrick's Day banner 3 times, I was finally able to shoot photos of my decorated mantel. I pretty much collected anything green I happen to have in the house to create this display.

 


Fortunately I still had a few green Christmas balls lying around so I incorporated them into the mantel vignette.









And there you have it...all ready for Saturday's Party!!

St. Paddy's Day Vignette

We are less than a week away from St. Patrick's feast day and I am almost done decorating the house for our big bash. Here is the side board in the entry all dressed and ready to meet guests. The side board itself is not very big so I like to keep it looking simple and green.






I made this wreath from a ceiling medallion I had laying in the garage for about the last 8 years. I originally bought it to use in the dining room but Mr. Rosemary Lane never got around to putting it up. So I painted it with Krylon spray paint in Ivy Leaf green. Then, with some ribbon I got on sale at Michael's craft store, I made a bow and hot glued it to the ribbon used to hang the wreath.


 I glued this little leprechaun to the center of the wreath and  glammed it up with a little glitter.


Remember my sweetheart paper garland I made for Valentine's day??? Well I made shamrock  garland for St. Paddy's Day!!! All I did was make 3 hearts, the middle one being a wee bit larger, and then stapled the bottoms together. Click here to see how the hearts are made.
