A Crowd Pleasing Tomato Salad Recipe


Since our trip into Tarpon Springs yesterday, I am so now in Greek Food Mood! This afternoon while at the pool, in between snapping pictures of the kids in the water with Mr. Rosemary Lane, I was thumbing through one of my Bon Appetite magazines and I came across this recipe from Chef Melia Marden. Chef Marden grew up in Hydra, one of the Greek Isles, which heavily influened her love of rustic fare.

Chef Marden's sliced tomatoes were the perfect accompaniment to the grilled steak we had tonight for our Father's Day supper, but they would also be fabulous with grilled chicken or lamb. Today I cut up 4 good sized tomatoes and plated them thinking that at some point I was going to be storing leftovers in the frig tonight. Not a chance...they were all scarfed up by everyone, not a caper left in site, and then my father poured the rest of the olive oil and vinegar mixture over his entire plate...there was NOTHING leftover!
The recipe is a quick one to throw together which is another big plus for mama!

Here is what you will need...

3-4 T. minced shallots
3-4 T. red wine vinegar
1/2 tsp. Kosher salt
1/2 tsp. sugar
1/2 c. extra virgin olive oil (EVOO)
4-5 large ripe tomatoes, sliced
2 T. rinsed salt packed capers
freshly ground black pepper
10 fresh medium basil leaves, julienned

What you will need to do...

In a small bowl, combine the first three ingredients and then gradually whisk in the EVOO to make the vinaigrette and then set it aside.

Place sliced tomatoes on serving tray and season with salt and pepper. Sprinkle the capers and basil on to of the tomatoes. Then whisk the vinaigrette one more time before pouring over the tomatoes.

And that's it! I know this will be one of my summer "go-to" recipes, especially once our garden tomatoes begin to come in. All I can say is that this dish was really good with tomatoes bought from the super market...YUMMMMMMEEEEEE can't wait to make it with tomatoes plucked right from the vine!!!

  1. Hi Barbara: Sounds so good. A beautiful recipe for summer. I bought the Captain a nice Father's Day gift, but what with graduation, etc. he hasn't had a chance to put it together yet, so I can't post about it yet either..Sounds like Father's Day was a success..Happy Monday..Judy

  3. This sounds and looks delicious! I tried your Grilled Chicken with Spicy Peanut Sauce yesterday for Father's Day, and it was a hit! Everyone agreed it was a "keeper!" Thanks for sharing!
