Easy Cranberry-Oatmeal Cheesecake Bars
It is totally cranberry season!!! I love cranberries, whether it is cranberry sauce, cranberry stuffing or cranberries paired with oatmeal and cream cheese in these little buttery bites...I love cranberries! Making only a few changes, I decided to give this dessert recipe from Borden a whirl.
Ingredients:
2 cups flour
1 1/2 cups rolled oats
3/4 cup plus 1 tablespoon firmly packed brown sugar
1 cup (2 sticks, but I used 3 sticks) butter, softened
1 (8 oz.) package cream cheese, softened
1 (14 oz.) can sweetened condensed milk
1/4 cup lemon juice ( I substituted orange juice)
2 tablespoons cornstarch
1 (16 oz.) can whole berry cranberry sauce
Heat oven to 350 degrees and spray a 13X9 inch baking pan with cooking spray, Next combine the flour, oats, brown sugar and butter until it forms coarse crumbs. Reserve 1 1/2 cups of the mixture and press the rest into the bottom of your baking pan. Bake in oven for 15 minutes.
Next beat the cream cheese until fluffy and then add the sweetened condensed milk and beat until smooth, then mix in the orange juice. Spread the mixture over the partially baked crust. In a small bowl blend together the cranberry sauce, the 1 T of brown sugar, the cornstarch. Then spread the cranberry mixture evenly on top of the cream cheese mixture and top with the remaining crumb mixture. Bake for 40 - 45 minutes depending on your oven, until golden brown. Remove from oven and let cool complete. Chill and then cut into bars.
This is a great recipe for a Thanksgiving dessert. You can even bake an extra batch and freeze them to have on hand for the Christmas season
Enjoy!!!
XO

A Thanksgiving Table ~ Blue and White Inspired
Well the dining room redecorating is almost to completion. I just have a few more items to tweak and Mr. RL has to put up the wainscoting, I am hopeful that it will be very soon. But it has been awhile since I last put together a tablescape, and it happens to be only two weeks before turkey day, I just couldn't resist setting a Thanksgiving table using some of my new blue transferware dishes I purchased the other day at the Christmas Tree Shop. They had a 20% off week and I bought these new dishes on the tail end of that sale.
I paired the blue and white salad plates with the white Country Cupboard plates I received from the Pfaltzgraff people last year along with some really old blue and white plates I bought back in my 20's. I think they look lovely resting on the new Devon Lake place mates from Williambsburg. The napkins and table runner were closeout buys from Williams-Sonoma a few years back, and they just happen to coordinate perfectly with the autumn feel of the tablescape.
Here is a sneaky peaky at the one dining room wall which was once the home to a rather large oil painting in the old red dining room.
The silver server was a yard sale find from about two years ago...shhhh...it was only 5 dollars!
I made good use of my beautiful new coffee pot by filling it with pretty faux flowers.
My glassware is pretty old too. I bought it about 13 years ago at Target.
And that is my table set for a fall feast! I am not actually entertaining for Thanksgiving this year, my shtick is Christmas Eve. This year Thanksgiving is going to be held at my sister-in-law's home and she will be hosting over forty for dinner! God Bless her right?
Thanksgiving is one of my favorite holidays and I plan to savor it before the Christmas rush begins. I know there won't be much time since it falls so late in the month this year, but I am going to do my best to give Thanksgiving the attention it rightfully deserves!
Hope you enjoying a wonderful week!
XO
