When I lived at home, every once in a while my father would make corn fritters for dinner and OMGosh were they delicious. So when I purchased this southern style cast iron pan over the weekend, I immediately remembered those yummy fritters of my dad's. These fritters are served hot but I really like them right out of the frig cold as well!
What you will need...
1 1/2 cups flour
1/2 cup sugar
2 eggs, gently whipped with a fork
1 tsp. baking powder
corn cut from 2-3 ears of corn
1/2 red pepper, chopped (or if you like a little heat you could use a jalapeno pepper)
Milk (enough to make the batter the consistency of pancake batter)
salt an pepper to taste
oil for cooking
What you will need to do...
Mix all dry ingredients together. Then add the egg and milk and mix, the batter should be that of pancake batter. Finally add the corn and pepper and season with salt and pepper.
Heat oil in pan. You could use a regular cast iron skillet if you don not have a Hoecake pan. Drop batter into pan, I used two heaping tablespoons of batter to make one fritter. Cook each side about two minutes and then transfer to serving plate or to an oven safe dish and place in warm oven until all of the fritters have been cooked.
This will yield about 6-8 fritters depending on size.
