Bacon and Egg Cupcakes


I saw a picture of these floating around on Facebook today and I just knew I had to make them. Fortunately I had half a pack of bacon in the freezer and a few eggs still hanging around from Easter.


So first I par-cooked the bacon and let it cool and drain on a few paper towels.

Then I took the bacon and placed it in an aluminum cupcake holder sprayed with Pam.


I used a few little pieces of bacon to cover the bottom of the cupcake holder.


I then cracked an egg into each prepared cupcake holder and baked them in a 350 degree F pre-heated oven for 20 minutes!

And they are totally delicious! The egg will end up with the consistency of a hard boiled egg. You can also add either some goat or cheddar cheese to the top before baking. I think these little beauties would be the perfect addition to a Mother's day breakfast or brunch...hint hint!

  6. First of all, good morning Barbara. I hope you are having a wonderful spring season.

    Honestly, I'm not a huge fan of eggs or bacon, I like them every once in a while and I only eat eggs that are scrambled or deviled (love deviled eggs) and I will only eat bacon if it is real bacon and not turkey. I'm not picky or anything, lol.

    I'm not really a breakfast eater, I actually tend to like breakfast foods better at dinner. The only thing I can eat in the morning that doesn't make me feel sick at my stomach is cereal. It's really a texture thing. It's like being lactose intolerant. I also don't like ham or pork chops it seems like anything that is made from pig doesn't agree with me.

    Anyway, I wish I liked them more, because these look really good and it is such a fabulous idea.

    One thing I can do with eggs that doesn't make me as nauseous is I like put them on top of my toast and eat them that way, or I will make a sandwich out of them with English muffins. So I like Bliss's idea of putting bread in them.

    I do love Waffle House omlets and I like Mickey D's Bacon, Egg and Cheese sandwich's, but even too much of that makes me feel yucky. Those are my guilty pleasures, lol.
