Stuffed Mushrooms...Buffalo Style!!!



This recipe came about because I was hankering for sausage stuffed mushrooms and the only sausage I had in the frig was Al Fresco's Buffalo Style Chicken Sausage. So I decided to make this Southwest version of stuffed mushrooms and I must admit...they came out really yummy. These little beauties are also low in calories as well as low in carbs because each sausage link is all natural containing 70% less fat and has only 130 calories and 12 carbohydrates.

FYI...if you use this particular brand of sausage it does pack a little bit o' heat!



What you will need...

12 oz. ( 1 package) Al Fresco's Buffalo Style Chicken Sausage, skins removed 
2 cloves chopped garlic
12 -15 good size mushrooms cleaned and with stems removed...if you go with the large stuffing mushrooms you will need less.
2 stalks celery, chopped
4 saltine crackers, crushed good
4-5 T crumbled blue cheese
A bottle of white wine with about 2-3 tablespoons removed.
1 white wine glass


What you will need to do...

Using the wine glass, pour yourself a healthy amount of the wine into it. Take a sip...ahh now you are all ready to start cooking!

Chop mushroom stems into small pieces. I like to use everything and these will help to add a little water to the pan as you cook the sausage. Heat frying pan and a add the sausage and the mushroom stems, cook for about 5 minutes breaking up the sausage into crumbled pieces. Add the garlic and a little water if pan seems too dry and cook for 3 more minutes. Remove from heat and add the tablespoons of wine, crackers, celery and half of the blue cheese, mix until everything begins sticks together. Add more wine if needed to the pan and go ahead and pour a little more into your glass as well.

Once everything is well mixed place a good amount of the sausage mixture in each mushroom cap. You may need to press down the mixture so that it stays together. Place in microwave for 3-4 minutes. In the meantime heat up your broiler. When the mushrooms are done in the microwave, top with remaining blue cheese and set in the broiler for approximately 3 minutes. Remove from broiler, pour yourself another glass of wine, and serve mushrooms immediately.
