Hi everyone...I so hope all you beautiful mommies enjoyed a wonderful Mother's Day yesterday! I had a lovely afternoon with my own mom who is up with my dad from Florida. We celebrated at my sister Kim's house, she is like a second mom to my kids, and we spent a glorious afternoon out on her beautiful back deck.
The sky even gave us a Mother's Day light show...
I had picked up some luscious strawberries the other day at the supermarket and for Mother's Day lunch my kids and hubby made for me my favorite salad.
This is so super easy and quick to make.
And incredibly scrumptious!!!
What you will need...
Salad greens
Fresh strawberries, sliced
Cleaned shrimp
Toasted almonds
Sliced scallions
Goat cheese
White Balsamic vinegar
Olive oil
Sea Salt
and a few grinds of fresh black pepper
What you need to do...
Saute shrimp in pan sprayed with cooking spray like Pam. and season as you like. (I typically will season with Mrs. Dash's Lemon Pepper.) Combine all ingredients and toss with the oil and vinegar. Season to taste with sea salt and ground pepper.
