Red Velvet Cuppy Cake with Cream Cheese Frosting



I found this recipe over at The Joy of Baking website and I have to tell you that it is a real keeper! This is a super light and super yummy cupcake with a hint of chocolate in the cake along with a fluffy cream cheese frosting.

What you will need to make the cupcake...

1 1/4 cups all purpose flour
1/4 tsp baking powder
1/4 tsp salt
1T. cocoa powder
1/4 c. unsalted or salted butter at room temperature
3/4 c. granulated sugar
1 large egg
1/2 tsp real of vanilla extract
1/2 cup of buttermilk or 1/2 cup regular milk with 1/2 tsp lemon juice or vinegar and let set for 5 minutes
red food coloring
1/2 tsp baking soda
1/2 tsp white vinegar


and what you need to do...

In large bowl sift together the first 4 ingredients. In mixer bowl or another large bowl, cream the butter until fluffy. Add the sugar and mix for 2 minutes an then add the egg and mix for  2 more minutes. Finally add the vanilla and blend together.

Add 1/3 of the dry ingredient mixture to the butter mixture, blend, then add half of the milk. Repeat finishing with the last 1/3 of the dry mixture. Add the food coloring until the desired color is achieved.

Then right before you add the mixture to the cups, mix the vinegar and baking soda together and while still fizzing, add to the batter and mix. (This will help to make your cupcakes light and airy)

Add 2 tablespoons of batter to each of the prepare cupcake cups and bake in an oven heated to 350 degrees Fahrenheit for 20 to 23 minutes. remove from oven and cool completely. 

Makes 12 cupcakes.

Now for the frosting you will need...

1 8oz pkg. cream cheese at room temperature
1/2 tsp real vanilla
1/2 c. powdered sugar
2/3 c. cold heavy cream

...and what you will need to do.

Using mixer, whip the cream cheese until soft and then add the sugar and vanilla. Finally, add the cold whipped cream and whip until the mixture begins to thicken. Now you are ready to frost your pretty little cakes!!!

  5. Red velvet cake is one of my all time favorites and cup cake size is perfect. I got a giggle from your cuppy cake word, as the Cuppy Cake Song used to be one of my grandson's favorites. He's gotten too grown up for it now..age 3 1/2..sigh.
